Creamy Mushroom Penne with Zacusca Mushroom

Creamy mushroom pasta without the guilt? Yes, please! If you can’t have dairy, then this recipe is for you. You can forget about that heavy cream and with the goodness of 5 veggies, you won’t even taste the difference by using a jar of Zacusca Mushroom instead.
Cook Time 20 minutes
Servings 4

Ingredients
  

  • 250g diced ham (optional if you want it vegetarian)
  • 1 jar Zacusca Mushroom
  • 1 tbsp extra virgin olive oil
  • 250g sliced mushrooms
  • 1 500g packet penne pasta
  • grated Parmesan (optional)

Instructions
 

  • Cook the penne according to the instructions on the packet.
  • While the pasta is cooking, in a frying pan, heat up 1tbsp of extra virgin olive oil, add the ham if using and the sliced mushrooms.
  • Simmer for 5 minutes or until the mushrooms are soft and start to change colour and become fragrant.
  • Add the jar of Zacusca Mushroom and stir to combine.
  • Drain the pasta and mix it with the mushroom sauce. You can top it with grated Parmesan if you prefer and garnish with parsley. I can assure you your kids will devour this dish as much as mine do!
