- 1 whole chicken about 1.5 kg
- 3 large carrots peeled and sliced
- 2 medium onions chopped
- 3 celery stalks chopped
- 1 small head of broccoli cut into florets
- 200 g egg noodles or your preferred type of noodles
- Salt to taste
- Freshly cracked black pepper to taste
- A handful of fresh parsley chopped
- 2 litres water or chicken broth

Prepare the Chicken:
- Place the whole chicken in a large pot. Add enough water or chicken broth to cover the chicken, about 2 litres.
Cook the Chicken:
- Bring the pot to a boil over medium-high heat. Once boiling, reduce the heat to low and let it simmer. Skim off any foam that rises to the surface. Continue to simmer for about 1-1.5 hours, or until the chicken is fully cooked and tender.
Remove and Shred the Chicken:
- Carefully remove the chicken from the pot and set it aside to cool slightly. Once cool enough to handle, remove the meat from the bones and shred it into bite-sized pieces. Discard the bones and skin.
Prepare the Vegetables:
- Add the chopped carrots, onions, and celery to the pot. Simmer for about 15-20 minutes, or until the vegetables are tender.
Add the Broccoli and Noodles:
- Add the broccoli florets and noodles to the pot. Continue to cook for another 10 minutes, or until the noodles are cooked through.
Season the Soup:
- Season the soup with salt and freshly cracked black pepper to taste. Stir in the shredded chicken and let it heat through for a few minutes.
Garnish and Serve:
- Ladle the hot soup into bowls and sprinkle with fresh chopped parsley.
