If you have a young family, you know it’s not easy to juggle dinner time and kids. So for an easy weeknight meal, Zacusca is coming to the rescue.

This quick and easy chicken and Zacusca Mushroom recipe will be ready in less than half an hour so you can get the kiddies ready for bed sooner and sit back and unwind with a glass of wine (or whatever you fancy). Plus, it tastes so delicious they won’t even realise they’re eating their veggies. Way to go mumma!

Pan Fried Chicken with Zacusca Mushroom

This quick and easy chicken and Zacusca Mushroom recipe will be ready in less than half an hour so you can get the kiddies ready for bed sooner and sit back and unwind with a glass of wine (or whatever you fancy). Plus, it tastes so delicious they won’t even realise they’re eating their veggies. Way to go mumma!

Cook Time 15 minutes
Servings 4

Ingredients
  

  • 2 skinless chicken breasts
  • 4tbsp of Zacusca Mushroom
  • 1tbsp extra virgin olive oil
  • salt and pepper to taste
  • 4 packets of frozen steam veggies
  • a few sprigs parsley to garnish

Instructions
 

  • Remove the tenders from your chicken breast and keep for another recipe.
  • Cut the chicken breast into thinner steak size pieces. You should get 4 pieces out of the 2 chicken breasts.
  • In a non-stick pan, heat up 1tbsp of extra virgin olive oil. Add the chicken and season with salt and pepper to taste. Cook for about 3 minutes on each side on high heat and season upon turning.
  • Meanwhile, steam your frozen veggie and rice packets, I used the ones from Aldis with the pumpkin, capsicum and pumpkin inside them.
  • Start plating by placing the rice and veggies out of one packet on each plate, one chicken breast steak and top it with a good dollop of Zacusca Mushroom. Garnish with a fresh sprig of parsley and voila! Fine-ish dining at home in less than 30 minutes.
