- Heat the olive oil in a cast iron pan over medium-high heat. Add diced chicken breast and cook until golden brown on the edges and cooked through. Season with salt, pepper, and garlic powder to taste. Set aside.
- In a medium saucepan, add your pre-cooked brown rice and the entire jar of Zacusca Mushroom. Rinse the jar with a small splash of water and pour that in too — this adds extra creaminess and ensures you get every bit of flavour!
- Stir in the cooked chicken pieces and add a handful of baby spinach. Allow it to simmer for a few minutes on low heat until the spinach wilts and the mixture is creamy and warmed through.
