If you have a young family, you know it’s not easy to juggle dinner time and kids. So for an easy weeknight meal, Zacusca Beetroot is coming to the rescue.
This quick and easy chorizo and Zacusca Beetroot recipe will be ready in around 45 minutes so you can get the kiddies ready for bed sooner and sit back and unwind with a glass of wine (or whatever you fancy). Plus, it tastes so delicious they won’t even realise they’re eating their veggies. Way to go mumma!
So here it goes:
Chorizo and Zacusca Beetroot Paella
Ingredients
- 2 chorizo sausages sliced on an angle
- 1 jar of Zacusca Beetroot
- 1 tbsp Zacusca Chilli (for a bit of a kick)
- 1 tbsp extra virgin olive oil
- 1/2 diced brown onion
- 2 cups wholegrain rice
- a few sprigs parsley to garnish
- chopped garlic chives
- 4 cups of water
Instructions
- n a large non-stick pot or wok heat up 1tbsp of extra virgin olive oil. Fry off the diced brown onion with the sliced chorizo, The whole house will start to smell amazing and everyone will get increasingly hungrier. Add the rice and stir to combine. Fry off for a couple of minutes until well incorporated.
- Add 4 cups of water and simmer for about 15 minutes or until the rice is cooked. Add the jar of Zacusca Beetroot and 1tbsp of Zacusca Chilli for a bit of buzz. You can totally skip it if you don’t like spice.
- Bring to boil and add a rain of chopped garlic chives for freshness and colour.
- Serve hot with a garnish of fresh sprigs of parsley and voila! Fine-ish dining at home in less than an hour.
