  • 1 jar Romanian Delights Eggplant Zacusca
  • 1 cup cooked chickpeas or drained tinned chickpeas
  • 4 large whole-grain tortillas or wraps
  • 2 cups fresh spinach leaves, washed and dried
  • 1 cucumber, julienned
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup crumbled feta cheese
  • Salt and pepper to taste


  • In a bowl, combine cooked chickpeas with Romanian Delights Eggplant Zacusca. Mix until the chickpeas are coated in Zacusca.
  • Warm the whole-grain tortillas or wraps according to package instructions.
  • Spread the Zacusca and chickpeas mixture evenly onto each tortilla.
  • Layer fresh spinach leaves, julienned cucumber, red onion slices, and crumbled feta cheese on top of the Zacusca-chickpea mixture.
