Who doesn’t love a good afternoon nibble? And if it’s packed with nutritious goodies, even better. These Savoury High Protein Cheese and Greek Yoghurt Crackers are crispy and delicious on the outside and soft and layered on the inside and they’re perfectly paired with any of your favourite Zacusca. I choose Zacusca Chilli for a bit of kick.
They’re also perfect in your kids lunchboxes or on an entertainer platter for your friends and family. So easy to make with only a few ingredients and minimal kneading, they will be sure to delight everyone’s tastebuds and keep them full until dinner.
HINT ❗ You can swap the Zacusca Chilli for Zacusca Eggplant. Also, for a vegan option, simply swap the dairy with non dairy alternatives and use a little bit of oil instead of the egg for a glossy finish.
So here it goes:
Savoury High Protein Cheese and Greek Yoghurt Crackers
Ingredients
- 1 cup light cheese shredded
- 1 and 1/2 cup plain flour
- 1/2 cup butter cubed
- Zacusca Chilli or Zacusca Eggplant
- 1/2 cup high protein Greek Yoghurt
- 1 egg whisked
- 1/4 cup sesame seeds to decorate
Instructions
- In a large bowl add the butter, the cheese the flour and the yoghurt. We mix all the ingredients until we form a compact dough. It might feel a little crumbly at first but it’ll form into a ball shape quickly.
- After we made the dough ball, we cover it with a plastic wrap and we pop it in the fridge for 1 hour for the dairy to chill again and set.
- We preheat the oven at 180 degrees (fan forced). After the dough has chilled, we roll it out into 0.5 cm sheets and we cut it into the desired lengths. I cut them in approx 5 cm long by 2 cm wide pieces to prevent them from breaking once baked.
- We placed them on an oven tray lined with baking paper, and using a pastry brush, we brush each cracker with the whisked egg and then sprinkle a few sesame seeds on top for decoration and added flavour.
- We bake them in the oven for 15-20 minutes or until golden brown.
- You can serve them on their own when you feel like snacking or you can even dip them into your favourite Zacusca.
