White bowl of spaghetti bolognese with Zacusca Eggplant

Swap your regular tomato sauce for our flavoursome Zacusca Eggplant. Jam-packed with 5 different veggies that even your kids will love, means less fussiness at the dinner table and more nutrition.

The signature smokiness will give it a distinct aftertaste to impress your audience for an easy guest dinner night.

 

Ingredients

✅ 1 500g pack wholegrain spaghetti

✅ 500g lean grass fed beef mince

✅ 2 jars of Zacusca Eggplant

✅ 1/4 cup shaved Parmesan

✅ salt and pepper to taste

✅ 1/4 cup chopped parsley

✅1 tbsp extra virgin olive oil

✅ 1 diced carrot

 

How to cook it

Cook the pasta al dente according to the instructions on the packet.

While the pasta is cooking, heat up the extra virgin olive oil into a large frying pan. Add the mince and fry it off until brown and crispy. Add the diced carrot and fry off for a couple of minutes or until soft.

Add the 2 jars of Zacusca Eggplant and stir through to combine with the mince and bring to boil.

Strain the pasta and start plating by placing 1/4 of the pasta in a serving bowl, top with 1/4 of the mince sauce. Scatter the shaved Parmesan and top with chopped parsley to serve. Enjoy!

 

❗HINT❗ If you don’t eat beef you can easily replace with chicken or turkey mince. To make it vegan you can replace the beef mince with any plant based mince and instead of Parmesan cheese you can use some vegan cheddar.
