Tuesday night is Taco night in our family and each time we try and spice things up with something a little different. These turkey tacos were truly a hit and made for a great way to get the kids to eat more veggies. Give it a go!
Ingredients
✅ 1 pack of hard shell tacos
✅ 30g Zacusca Chilli
✅ 1 large ripe avocado
✅ 250g shredded cheddar or mozzarella cheese
✅ 500g turkey mince
✅ 2 green onions
✅ 1 pack low salt taco seasoning
✅ 1 diced tomato
✅ 250g Greek yoghurt
✅ 100g sliced black olives
✅ 250g chopped kale (or any other leafy mix you like)
✅ the juice of 1/2 lemon
How to cook it
Start by heating up a chargrill or pan until you can’t hold your hand over it for longer than 5 seconds. Add the turkey mince and cook until brown, add the taco seasoning together with the chopped green onions and stir to incorporate all the ingredients.
Make the guacamole in a mortar and pestle, by halving the avocado, scooping it out of its peel and smashing it together with the lemon juice.
Heat the taco shells according to the instructions on the packet and start plating. In a taco shell add a few kale leaves, 1 tbsp of the mince, cheese, avocado, Greek yoghurt, olives, diced tomatoes and to top it all off a tbsp of Zacusca Chilli. To die for!
❗HINT❗ For a child friendly version, you can swap the Zacusca Chilli for Zacusca Eggplant and it will taste devine! And for a vegan option, swap the mince for plant based mince and the cheese with your favourite vegan cheese. Enjoy!
